Chicken Pasta Soup (For Toddler)

Now it is noon here in Texas and I am in the middle of lot of things like cooking, playing Legos with my kid, filling up my pantry boxes….You guys must be thinking now “then, why are you sitting down and writing this post in the middle of all these ?”. hahaaa, that is true, but sometimes I like writing my blog in the middle of everything and take it as a challenge!!!!

It is Summer, season of outdoor activities and fun! but the risk of getting cold and allergic reactions is more in this season. I love all the summer activities but I hate the time when my son is sick and not eating well. I know, a sick kid may not have the appetite to eat, but he still needs nutrition. I always make soup while my son gets sick, especially if he has stuffy nose because warm soup loosens mucus, so he can breathe easier. I usually make chicken soup by adding lot of herbs to boost his immune system. We parents can have this soup too. 
Today I am going to share a soup recipe “Chicken Pasta Soup” with you all. I am sure your family will love this soup.

Ingredients
Chicken breast- 1 medium size, cut into small cube shapes
Red onion- 1, medium size
Tomatoes- 2, medium size chopped
Coconut milk- ~12 OZ
Pasta- Hand full (mix of three pasta, trio italiano)
Butter
Fresh herbs (Cilantro, parsley, mint and basil)
Dry herbs (bay leaves, cloves, peppercorn and anise seeds)
Salt and Pepper, to taste

Method
Step 1:
Cook pasta as per package direction by adding salt, one bay leaf and two cloves. Drain off water.

Step 2:
Heat a large size pot over medium heat and add butter. While butter melts, add dry herbs and onion together. When onion turns transparent add tomato pieces, salt and pepper power. Cook them for about 2 minutes.

Step 3: Now add coconut milk. Stir well and allow it to boil.

Step 4: Add chicken pieces to the boiling coconut milk mixture. Stir very well and add salt. Close the pot with lid and cook until all the chicken pieces cook very well.

Step 5: Now it is time to add all the fresh herbs and cooked pasta. Stir very well and keep boiling for another 1 minute. Chicken Pasta Soup is ready now. Check for salt and pepper.

The smell of that creamy chicken pasta soup is so tempting and your family cannot resist having this.


Serve warm!

Ingredients: Chicken, Pasta, red onion, tomatoes, coconut milk, pepper, salt, dry herbs and fresh herbs

Cook pasta by adding salt and dry herbs

Saute dry herbs, onion and tomatoes in butter

Add coconut milk and boil the mixture

Cook chicken in coconut mixture and add cooked pasta 

Chicken Pasta Soup is ready to serve

Mint Orange Juice (For Toddler)

How are you all doing? Here I am sitting on my patio, writing this post and thinking of expanding my herb garden. Since it is summer here in Texas, it is the best time to do gardening. When I was a kid, me, my sister and brother used to do gardening, the funny thing is, every other day, I used to pull out plant from pot to see whether it started to root J. My son was doing the same thing with my plants! Hahaa.., but I could almost stop him by telling “If you pull out the plants, no more butterflies will come to our garden”. He never did that since then, because he loves butterfliesJ.

Today I am going to share with you a beautiful healthy “Mint Orange Juice” recipe, which you all parents can share with your kids. Mint (pudina) is a herb with a variety of potential health benefits. As you all may know, mint is a great breathe freshener.  For kids and adults, mint is a natural remedy for indigestion and it provides instant relief from gas troubles, stomach aches etc. Also, mint gives cooling sensation to the skin and helps in dealing with skin irritations. So try to use this herb in your daily life.




Ingredients
Orange- 1, peeled and segmented
Mint- 3 or 4 fresh leaves
Honey- 1 Tbsp

Method

Add all the ingredients to the blender and blend until mint leaves are fully dissolve in orange juice. You can add a little bit of water to get runny consistency. Mint Orange juice, is ready to drink. Enjoy!

Chicken Lollipops (Kids Party Appetizer)

Like every other kids, my son is also a big fan of lollipops. Few days back, he is the one who gave me the idea of making chicken lollipops. That day, I made some chicken balls for dinner and he decided to put his lollipop stick into that chicken ball and said, “Mama, see chicken lollipop”!!:) Then I thought, why not, it is time to try another cooking recipe :) 

This is a perfect summer party or birthday party appetizer too. I hope your little one will enjoy this yummy "Chicken Lollipops"!


  
Ingredients
Chicken breast- 1 medium size fillet
Chopped onion- ½ cup
Ginger, chopped- 1 Tsp
Garlic, chopped- 1 Tsp
Cilantro, chopped- 1 Tbsp
Pepper powder- 1/3 Tsp
Paprika- 1/4 Tsp
Salt, to taste
Bread crumbs- 1 Cup
Skewers, small size

Method
Step 1: Wash chicken breast and cut them into medium size cube shapes.

Step 2: Mince chicken pieces in a blender.

Step 3: Mix together minced chicken, onion, ginger, garlic, cilantro and all spices. Add 1 Tsp of oil into this. Oil will help to stick them together.

Step 4: Now it is time to make them into small balls.

Step 5: Roll each chicken balls into bread crumbs and roll very well until they fully coated (You dont have to add egg in this step, since we added oil, balls will easly get coated with bread crumbs).

Step 6: Heat oil in a pan over medium heat and fry each chicken balls. When they turn golden brown color, transfer them into paper towel.

Step 7: Now it is time to insert skewers into each chicken ball through the center.

“Chicken Lollipops” are ready to serve. Enjoy your Party!!

Stir Fried Vegetable Spaghetti (For Toddler)

A simple bowl of pasta is over the top of every other dish, especially for kids. You can make simple pasta dishes, like cook all vegetables and mix them with cooked pasta, so simple and very easy to make. But if you are ready to spend few more minutes in your kitchen, you can make a family pasta meal with this recipe. No need to cook separate meal for your kid. 
You can use any kind of pasta for this recipe even if you don’t have spaghetti. But I am pretty sure that you need those wonder spaghetti pasta to see our little-one's BIG smile and of course a clean plate too J  



Ingredients (For 3 servings)
Spaghetti- 200 Gram
Carrot- ~10 small, lengthwise cut
Spinach- Handful chopped
Grape tomatoes- ~15 cut into half
Garlic- 2 cloves chopped
Pepper powder- 1/3 Tsp
Salt, to taste
Parmesan cheese- To sprinkle
Olive oil
Dried Oregano leaves, a pinch

Method
Step 1: Cook pasta as per the instruction on packet (I usually cook pasta for 10 minutes in boiling water with salt). Then strain pasta.

Step 2: Heat olive oil in a pan over medium heat and saute garlic. When garlic starts to turn brown, add all the vegetables and cook them by adding salt and little bit of water. When vegetables cook very well, saute them by adding 1Tbsp more olive oil and pepper until the vegetables start to brown.

Step 3: Add cooked spaghetti to this stir-fried vegetables and mix it very well with a pinch of oregano. Close the lid of the pan for about 1 minute to incorporate all those beautiful vegetable flavor to pasta. Then take off lid and stir one more time.

Step 4: Now turn off heat and sprinkle parmesan cheese on top. Stir Fried Vegetable spaghetti is ready to serve. Enjoy!!

Stir-Fried Chicken

If you have picky eaters in your home, stir fry is a great choice because you can stir fry anything like veggies, meat or chicken OR mix them together as the way they want. My son likes stir fry, but he doesn’t like to mix chicken with veggies together. He likes chicken stir fry, but just chicken, not chicken and veggie mix. That is OK, I can make separate veggie stir fry for him :).



Ingredients (For 3 servings)
Chicken breast, lean- 150 gram
Ginger and garlic, chopped (optional)- 1 Tsp
Turmeric powder- ½ Tsp
Paprika- ½ Tsp
Pepper powder- ½ Tsp
Lemon juice- 2 Tbsp
Olive oil- 1 Tbsp
Salt, to taste

Method 
Step 1: Wash chicken and cut them into medium size pieces.

Step 2: Marinate chicken pieces with ginger, garlic, spices, lemon and salt. Keep it in room temperature for about 20 minutes.

Step 3: Cook chicken without adding water. I use my pressure cooker for cooking chicken by giving two whistles.

Step 4: Now it is time to pull apart chicken to small bite size pieces.

Step 5: Heat olive oil in a pan over medium heat and add chicken pieces. Stir them very well. You can add a pinch of pepper to this. Keep stirring until you get lightly brown colored stir fried chicken. Check for salt. So delicious stir-fried chicken is ready to serve, and the good thing is, they can have it as such.

Ingredients: Chicken, spices, ginger and garlic (optional)

Marinate chicken pieces with all spices ginger, garlic, lemon and salt and cook until chicken cooked very well

Saute chicken in olive oil until they turn brown

Vegetable Stir Fry (For Toddler)

When I started cooking, stir fry dishes were one of my favorite items, because if you know the basic of stir frying you can combine any random vegetables whatever is in your fridge, for making variety of stir fried dishes. Stir fry is always a family favorite dish, especially for kids. These beautiful colored stir fries always make it way more delicious too. I usually buy frozen vegetable stir fry blend from stores and add some peas to make it more protein rich. If you buy frozen blend, you can use small portion and rest you can keep in freezer. Very easy recipe and too delicious J




Ingredients (For 3 servings)
Stir fry blend or any vegetables cut into lengthwise small pieces-  200 g
Purple hull peas- 20 g
Turmeric powder- 1/4 Tsp
Pepper powder- 1/3 Tsp
Coconut oil- 2 Tbsp
Salt, to taste

Method
Step 1: Mix all the vegetables and peas together and put them in a large pan.

Step 2: Add water (1/2 cup) to the pan.

Step 3: Heat pan over high heat and cook them until all the vegetables are half way cooked. Now add turmeric powder, pepper powder and salt to this. Keep cooking until all the vegetables are fully cooked (stirring periodically, and keep adding water in between if the vegetables are not cooked well).

Step 4: Now add coconut oil to the cooked vegetables and cook them until your vegetables start to brown. Now you can turn off heat and vegetable stir fry is ready to serve.


Serve with rice.
